Ingredients

  • 4 bone-in pork chops
  • 1 cup bread crumbs
  • 1/2 cup chopped onions
  • 1/2 cup diced apples
  • 1/4 cup chopped celery
  • 1/4 cup chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat.
  • Sauté onions and celery until soft.
  • Add diced apples and cook for an additional 2 minutes.
  • Stir in bread crumbs, thyme, salt, and pepper.
  • Slowly add chicken broth until mixture is moistened but not soggy.
  • Cut a pocket in each pork chop without cutting all the way through.
  • Stuff each chop with the filling mixture.
  • Sear the stuffed chops for 3-4 minutes on each side.
  • Transfer the chops to the oven and bake for 20 minutes or until cooked through.
