Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup imitation crab meat chopped
  • 1/2 cup mayonnaise
  • 1/4 cup cream cheese softened
  • 1 avocado sliced
  • 1/4 cup green onions chopped
  • 1/2 cup shredded cheese mozzarella or cheddar

Instructions

  • Preheat the oven to 350°F (175°C).
  • Rinse the sushi rice under cold water until the water runs clear.
  • In a rice cooker, combine the rinsed rice and water; cook according to the manufacturer's instructions.
  • Once cooked, let the rice cool slightly, then mix in rice vinegar, sugar, and salt.
  • In a bowl, combine chopped imitation crab, mayonnaise, and cream cheese.
  • Spread the sushi rice evenly in a greased baking dish.
  • Layer the crab mixture over the rice.
  • Top with sliced avocado and sprinkle with green onions.
  • Evenly distribute shredded cheese on top.
  • Bake for 20-25 minutes until the top is golden and bubbly.
