Ingredients

  • 1 fillet of salmon 6 oz
  • 1 cup cooked jasmine rice
  • ½ avocado sliced
  • ¼ cup edamame
  • 2 tbsp pickled ginger
  • 1 sheet nori cut into strips
  • Soy sauce to taste
  • Sesame seeds for garnish
  • Green onions chopped (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • Season the salmon fillet with salt, pepper, and a drizzle of olive oil.
  • Place the salmon on a baking sheet lined with parchment paper.
  • Bake the salmon for about 12-15 minutes, or until cooked through.
  • Prepare the rice according to package instructions.
  • Layer the cooked rice in a bowl.
  • Place the baked salmon on top of the rice.
  • Arrange avocado slices, edamame, and pickled ginger around the salmon.
  • Sprinkle with sesame seeds and green onions.
  • Drizzle with soy sauce before serving.
