Ingredients

  • 4 medium-sized beets
  • 1 cup apple cider vinegar
  • 1 cup water
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon whole cloves
  • 1 teaspoon allspice berries
  • 1 bay leaf
  • 1/4 teaspoon black peppercorns
  • Optional: a pinch of cinnamon

Instructions

  • Wash the beets thoroughly to remove any dirt.
  • Place the beets in a pot, cover with water, and bring to a boil.
  • Reduce heat and simmer for about 30-40 minutes, until tender.
  • Remove the beets and let them cool slightly.
  • Peel the skins off the beets; they should come off easily.
  • Slice the beets into rounds or wedges, depending on your preference.
  • In another pot, combine apple cider vinegar, water, sugar, salt, and spices.
  • Bring the mixture to a boil, stirring until the sugar dissolves.
  • Add the sliced beets to the pot and simmer for an additional 10 minutes.
  • Remove from heat, let cool, and transfer to jars. Refrigerate for at least 24 hours before serving.
