Season the beef roast with salt, pepper, and Italian seasoning.
Heat a large skillet over medium-high heat and sear the beef on all sides until browned.
Transfer the beef to a slow cooker and add sliced onion, garlic, and beef broth.
Cover and cook on low for 4 hours or until tender.
Once done, shred the beef using two forks.
Toast the sandwich rolls lightly.
Pile the shredded beef onto each roll.
Top with giardiniera and sliced peppers.
Optional: Add provolone cheese on top.
