Ingredients

  • 4 cups fresh broccoli florets
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 can cream of mushroom soup
  • ½ cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup crushed crackers
  • 2 tablespoons melted butter
  • ¼ cup grated Parmesan cheese

Instructions

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13-inch baking dish with cooking spray or butter.
  • In a large pot, bring water to a boil and blanch the broccoli florets for 2-3 minutes.
  • Drain the broccoli and set aside to cool slightly.
  • In a mixing bowl, combine the cream of mushroom soup, milk, garlic powder, salt, and pepper.
  • Add the cooked rice and mix well to combine.
  • Fold in the blanched broccoli and half of the cheddar cheese.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • In a separate bowl, combine crushed crackers with melted butter and Parmesan cheese.
  • Sprinkle the cracker mixture evenly over the casserole.
  • Bake in the preheated oven for 25-30 minutes, or until bubbly and golden brown.
